Combine pork, soy sauce, vinegar, garlic, bay leaves, and peppercorns in a pot.

Add water and bring to a boil.
Tip: Dont stir during initial boil - let the vinegar mellow.

Reduce heat and simmer covered for 45 minutes.

Uncover and continue cooking until sauce reduces and pork is tender.

Optional: Brown the pork pieces in the rendered fat for extra flavor.

Serve over hot rice with the sauce.
