No potluck is complete without mochiko chicken. This recipe was handed down from my aunty.

    Mix mochiko, cornstarch, soy sauce, sugar, eggs, green onions, and garlic.

    Add chicken pieces and marinate for at least 4 hours or overnight.

    Tip: Overnight is best for flavor.

    Heat oil to 350°F in a deep pan or wok.

    Fry chicken in batches for 6-8 minutes until golden and cooked through.

    Tip: Dont overcrowd the oil.

    Drain on wire rack and serve immediately.
