Miso Butterfish

Made famous by Nobu, this dish has become a Hawaiian classic. The miso caramelizes beautifully.

Instructions

Mix miso, mirin, sake, and sugar until smooth.

Marinate fish for at least 2 hours, up to 3 days.
Tip: Longer is better.

Preheat broiler. Scrape off excess marinade.
Tip: Excess will burn.

Broil 8-10 minutes until caramelized and fish flakes.

Serve immediately over rice.
