    Sauté garlic and onion. Add pork and brown.

    Add 1 cup water. Simmer until pork is tender.

    Add vinegar and jalapeños. Do not stir for 5 minutes.

    Add pork blood slowly, stirring constantly.

    Tip: Stir to prevent curdling.

    Simmer until thick. Season with fish sauce.
