    Mix coconut and panko in a bowl.

    Dredge shrimp in flour, dip in egg, coat with coconut mixture.

    Heat oil to 350°F. Fry shrimp until golden, about 2 minutes per side.

    Drain on paper towels. Serve with sweet chili sauce.
