Soak long rice in warm water for 30 minutes, drain and cut into shorter lengths.

Simmer chicken in broth with ginger until cooked, about 25 minutes.

Remove chicken, shred meat, discard bones and skin.

Add long rice to broth, cook until soft, about 5 minutes.

Return chicken to pot, add green onions, season with salt.

Serve hot in bowls.
